The Kaz Special

Kaz Special
One of my favourite, dubbed the kaz special (after my Margy loving boss Karin Oxford), is icy and simple.

I use a big old mexican recycled glass marg glass with maldon sea salt on the rim. Our house Tequila is the Tequila Blu, a cert organic reposado made by asm liquor, and Australian company.

30ml lime juice
45ml Tequila Blu
15ml triple sec
Fill the glass with shaved ice and pour over. Mmmm.

Pink Margarita
For the customer with a somewhat sweeter tooth, I have devised a pink grapefruit variant as yet unnamed. “Pink Margarita” sounds crap.

60ml Tequila Blu
30ml ruby red grapefruit (ocean spray brand is good)
2ml Frangelico to float
Murray River pink salt to garnish.

Shake and strain into salt rimmed glass, float frangelico on top. Sometimes a squeeze of fresh lime doesn’t go astray either.
